Easy 6-Ingredient Breakfast Hash
Who doesn’t love a good All-American breakfast hash? It is warm, comforting, filling, and always delicious! You can find a variation of this on almost any breakfast menu but I think this is the best, most wholesome, and has ALL the flavors!
This recipe is great for feeding two people, feeding a family, and saving as many leftovers as you need because it is SO GOOD even after reheating it. It doesn’t call for that many ingredients either! Make as big of a batch as you want by multiplying the ingredients.
INGREDIENTS
· 3 Russet Potatoes (shaved and cubed)
· 1 lb Chorizo, Breakfast Sausage, or Ground Meat of Choice
· 3 Garlic Cloves (minced)
· ½-1 Onion (chopped)
· 2 Eggs (one for each portion)
· 4 tbsp Olive Oil
· Optional & to your taste: Salt, Pepper, Crushed Red Pepper, Basil
DIRECTIONS
1. Place 2 tablespoons of olive oil in the skillet. Cook meat on medium heat until browned and cooked through. Move it into a separate bowl until later.
2. Place the remaining 2 tablespoons of olive oil in the same skillet. Put cubed potatoes in and cook for 3-4 minutes on high heat to get them started.
3. Reduce stove heat to medium and add chopped onion to skillet. Cook until onions and potatoes are cooked down.
4. Lower stove heat to low and add minced garlic to the pan and cook for 1 minute.
5. Keep the heat on low and add the meat back to the skillet. Cook and stir for 1 minute.
6. In a separate pan, cook eggs how you like them. I did sunny eggs but you can do scrambled or however you prefer.
7. Place a portion of hash on a plate. Add salt and pepper to taste! Place egg on top and top with additional salt, pepper, crushed red pepper flakes, and/or chopped basil.
