Garlicky Mustard Chicken
Baked chicken is so easy, so delicious, and keeps the chicken so juicy! This recipe’s marinade is a mix of freshly minced garlic, Dijon mustard, honey, and red pepper flakes making it sweet, spicy, and sticky for a crispy crust once it’s baked…TO. DIE. FOR!
The marinade takes only a couple minutes to make and once the chicken is coated, you don’t even have to grease the pan. Put it in the oven and in 35 minutes, it is as good as gold.
I used chicken thighs in this recipe but chicken breasts would work great too, just lower the cooking time by 5-10 minutes. Please be advised that oven times vary.
INGREDIENTS
· 1.5-2 lbs chicken thighs
· 1 tsp salt
· 1 tsp pepper
· 2 tbsp olive oil
· 2 tbsp Dijon mustard (grainy or regular)
· 2 tbsp raw honey
· 6 garlic cloves
· ¼- ½ tsp red pepper flakes (depending on your spice preference)
DIRECTIONS
1. Preheat oven to 425°F degrees.
2. Pat chicken thighs dry and season them with salt and pepper on both sides.
3. Whisk the olive oil, mustard, honey, garlic, and red pepper flakes together in a bowl.
4. Place chicken thighs in a bowl and toss them with sauce.
5. Transfer the saucy chicken thighs in a 9x13 inch backing dish. Include any additional sauce left in bowl on top of chicken thighs.
6. Bake chicken thighs for 35 minutes or until they have an internal temperate of 165°F degrees and the skin is crispy.
7. Remove chicken from oven and cover with foil for 10 minutes before serving.
