Savory 6-Ingredient Chicken Salad

Chicken Salad SZN! It is actually always chicken salad season in our house but there is something about the hot weather that makes a cold chicken salad so refreshing. This savory chicken salad is packed with protein, flavor, and is only SIX ingredients.
This recipe is gluten-free, sugar-free, and dairy-free!

Savory Chicken Salad on Cucumbers Sprinkled with Paprika

Did I mention it only takes 15 minutes to make and can last in the refrigerator for 3-5 days? A great meal prep option or something to make when you’re like me and grab a fork to eat it straight out of the bowl. Don’t mind me, I am just doing my thing!

Eat it plain, on a bed of greens, with crackers, or on top of cucumbers like I did. Breakfast, lunch , dinner, or an appetizer , it is ALWAYS good. I sprinkled these little ones with a bit of paprika because spice is nice sometimes!


INGREDIENTS

·      2 cups of chopped cooked chicken (I poached breasts, you can use a rotisserie chicken for less prep)
·      ½ cup of mayonnaise (I prefer Duke’s mayo, it is gluten-free & sugar-free!)
· You can also use greek yogurt here if you aren’t a mayo fan! Add 1-2 tbsp of mustard to your taste preference for more flavor if desired.
·      1 tablespoon lemon juice
·      ¼ cup slivered almonds
·      1-2 stalks of celery, chopped
·      1 bunch of green onions, chopped
·      Salt and Pepper to taste


DIRECTIONS

1.     Cook chicken by poaching in water for 10 minutes or until fully cooked.

2.     Shred the chicken with two forks on a cutting board.

3.     In a medium bowl, mix together mayonnaise, lemon juice, and salt and pepper.

4.     Add chicken, almonds, celery, and green onions to bowl. Mix.

5.     Eat right away or allow flavors to blend together for three hours or overnight in the refrigerator for optimum flavor!
