Buffalo chicken is a staple in our home.  The first time I made this recipe, my fiancé looked at me like I was crazy because I put it on top of a sweet potato. Once he tried it, it was his new favorite meal!  It’s so tender, juicy, and will warm up your SOUL! Not to mention that it is only THREE ingredients and takes less than 5 minutes to prepare before cooking.

3-Ingredient Slow-Cooker Buffalo Chicken on a Sweet Potato

This buffalo chicken is SO easy because once you put the THREE ingredients in the crockpot, your work is done! Although I have the chicken on top of a baked sweet potato in this recipe, you can also use it as a dip, on sandwiches, on salads, and I even reheat it the next day to eat it with a spoon by itself!

Depending on which buffalo sauce you use, this can be gluten-free, dairy-free, or sugar-free. I used The New Primal HOT Buffalo Sauce which is certified gluten-free, certified Paleo, dairy-free,  zero sugar, and Whole30 Approved! Be aware that this one is SPICY. You can use whatever buffalo wing sauce you would like such as Frank’s or Moore’s. You can also mix it up and top it with your favorite Ranch Dressing!


INGREDIENTS

·      1.5-2 pounds of chicken breasts (can also use thighs)
·      1 Bottle Buffalo Sauce
·      1 tbsp Coconut Oil, melted


DIRECTIONS

1.     Using a basting brush (Can also use a paper towel), rub the inside of the crockpot with a small amount of the coconut oil so the bottom and sides are covered. This is to prevent the chicken from sticking and the sauce from burning.

2.     Microwave the remaining coconut oil for 30 seconds in a microwave safe bowl.

3.     Pour 1 cup of the bottle of buffalo sauce into the bowl with the coconut oil and stir.

4.     Place chicken in bottom of oiled crockpot.

5.     Pour the sauce on top of the chicken ensuring all the chicken is covered.

6.     Cover the crockpot with the lid and cook on low for 4-5 hours or on high for 2-3 hours. Cooking times vary for size of chicken and crockpot.

7.     Once complete, remove the chicken from crockpot and shred it with two forks. Put the chicken back in the sauce in the crockpot for 20 minutes on low to mix all the flavors and juices.

8.     If you like it really saucy, add the remainder of the bottle of hot sauce. I do this but it is totally optional!

9.     45 minutes before the chicken is done, cook the sweet potatoes. You can look up how to bake a perfect sweet potato HERE.
