Dark Chocolate-Covered Almond Butter Stuffed Dates Topped with Pink Sea Salt and Pistachios

I always want something sweet after I eat and keeping these around really help me AVOID unhealthy sweets.  I mix the dark chocolate with coconut oil instead of milk making these a dairy-free snack! 

Not only are they delicious, but they are also nutritious, and even filling!

I topped mine with pistachios and sea salt but they can be topped with ANYTHING you’d like such as coconut flakes, other nuts, seeds, or even some herbs such as lavender.


INGREDIENTS

  • 1 cup of Dark Chocolate Morsels 

  • 1 Tablespoon of Coconut Oil

  • 12-16 Medjool Dates (pitted & sliced in half longways)

  • 1/2 Cup Almond Butter (Can use Sunflower butter if allergic to nuts!)

  • Optional Toppings: Pistachios, Sea Salt, coconut flakes, seeds, lavender, or anything else you enjoy!


DIRECTIONS

  1. If your dates are not pitted, remove the pit.

  2. Fill the dates with almond butter and close them back up to be dipped.

  3. Bring the water in a double boiler to a boil and place the dark chocolate chips and coconut oil in the bowl. Melt together, stirring occasionally to help it melt evenly. (If you don’t have a double boiler, microwave the chocolate and coconut oil for 30 seconds and stir. Repeat this process until fully melted.)

  4. Once melted, dip the stuffed date into the chocolate and place them on a parchment-lined baking pan.

  5. Sprinkle them with sea salt, pistachios, or other desired topping.

  6. Let them dry in the refrigerator and SERVE!

  7. Store in an airtight container in the refrigerator for up to a week. I typically let mine thaw for a few minutes before eating!
