Easy 5-Ingredient Egg Salad
Before I leave for a work trip this weekend, I have a dozen Vital Farms Organic Eggs I need to use so they don’t go to waste! I made some scrambled eggs for breakfast. I also put the rest of the eggs in a pot of water to make some
EASY 5-INGREDIENT EGG SALAD!
This is a great meal prep option to keep on hand for up to three days. Eggs are a huge source of protein in my diet but since my family has a history of high-cholesterol, I limit the egg yolks.
BONUS TIP: You can keep the yolks in for a creamier texture and some added vitamins and minerals!
I love adding spice to foods so this time I topped it with Dan-O’s, a local seasoning I picked up at the Kentucky Home and Garden Show. Feel free to add a spice of your liking such as a dash of cajun seasoning or paprika on top for an added kick! See the recipe below.
INGREDIENTS
4 hard-boiled egg whites
1 hard-boiled egg yolk
2T of mayonnaise
1T of Dijon mustard
Salt and Pepper to desired taste
Optional: a spicy seasoning such as cajun, paprika, or Dan-O’s for topping
DIRECTIONS
Place eggs in a saucepan with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 12-14 minutes. Remove from hot water, cool, peel and chop.
BONUS TIP: To peel the eggs easily, place the hot eggs in an ice bath when you remove them from the boiling water. Easily crack the whole egg shell by hitting gently on bottom of sink before removing whole thing. The ice baths stops the cooking process and the breaking helps them peel easier!
Place the chopped eggs in a bowl and stir in the mayonnaise and mustard. Season with salt and pepper and stir to desired to taste and consistency.
Top with optional spicy seasoning and serve on your favorite bread, crackers, or by itself!
BONUS TIP: If you mix in the mayonnaise while the eggs are still warm, it will help infuse the flavors!
